Hey hey! So glad you came to my site. I’m Paul Herrera, a Registered Dietitian Nutritionist, and Yoga Instructor. Originally from Blacksburg, Va, I now reside in Houston, Texas, with my wife and official taste-tester, Alexandra and my sweet baby girl, Vender.
I have a Bachelor’s Degree in Nutrition and Dietetics from Virginia Polytechnic Institute and State University in Blacksburg, VA, and a Masters Degree in Exercise Science from Concordia University Chicago. I am also a Certified Personal Trainer (CPT), Group Exercise Teacher, and Registered Yoga Teacher (RYT).
I certainly love food. My earliest memories are being in our kitchen with my mother trying new recipes, rolling pasta, and baking cookies. Decades later and my favorite area in the house is still the kitchen, this time with my wife on the counter.
It’s perhaps no surprise, and I pursued to study nutrition and became a dietitian. I describe myself as not a regular dietitian but a cool one. That’s because I don’t focus on fad diets, weight loss, or anything that makes you feel bad about your food choices. In my previous career, I was a sports dietitian focusing on eating disorders, and I understand very well the impact of food restriction can have. My efforts are to help others to discover their healthiest relationship with food. It means ditching the weighing scale, ignoring calorie counts, and listening intuitively to what the body needs.
My philosophy around cooking has been focusing on eating lots of plant foods with a little egg or dairy occasionally thrown in. It’s absolutely nothing to do with numbers. I first became a vegetarian back in high school.
